Process of French bread with flour (W190) and other typical ingredients like water, salt and yeast. Evaluate volume and appearance of addition FACBAKE XSP in 10, 15 and 20 ppm of flour.
All trials contain ascorbic acid and FACBAKE FAA
With 20 ppm of FACBAKE XSP increase volume 35% in contract with control, with 10 ppm increase 25% and 15 ppm increase 30%.
